The pics on the front page of the blog look great! It there a particular way we need to structure our blog posts to also have this happen, or just to include the picture within the first 25 words or something?

I am going to increase the amount of characters that show up on the summary page of the blogs, so I don't know yet But yes it will just depend on whether your photo code shows up within that many characters.
