There isn't a TON of difference between what is available in the new UI and what you guys have as yours is pretty current (For the most part)

What you do not have - Document management (Create, save, assign and manage documents in both plain text or html) Allows you to create html emails in a wysiwyg editor.

To go along with it, a new way to set up drip email campaigns based on the assignment of the system

Other things you guys might not have - Reports (Rejected, accepted etc) as well as potential and closed value reporting.

All of this stuff is available right out of the box.

Another thing that is changing in the new UI is what information is displayed on the summary screens - Date Registered is replaced with most recent visit (As this is more important) although it maintains the effect as if it is their first time visiting, they also show up in that days recent visits as the registration is a recent visit.

There is a bunch of other stuff as well - but sorry guys - the programmer isn't even close to having it in an exportable state.
