Tony - you can look for links back to your site in a couple of different places - google webmaster tools - look what links are showing for different pages, also yahoo site explorer shows all the links back. The other way to track where the articles get picked up would be to do a search for a particular sentance or two.
Bigger question though - is what is tracking going to accomplish? I'm assuming you are having REW do the article submission for you? Might be more productive to figure out what other activities you could do to increase your link portfolio and not worry too much about how many links one or two individual articles get - I haven't done much with article submission but I would think it varries depending on how that article "hits" with webmasters and others who decide to pick up the content.

Note: make sure you mark the check box that all links to the specified domains will be counted and not just a specific page.
