What triggers the drip campaign to start, is it clicking on "yes" in the subscribed? Or is it when you assign them to the group that has all the drip emails in it?

If I clicked on yes for subscribed but never put them into a group would the drip campaign still start sending out the emails?

They need to be in a group to be on a certain campaign. They also need to be subscribed to be on any campaign.

Until both these conditions are met they will not be on a campaign.
