I'm taking a poll!

What do you guys use to develop your sites, and keep them maintained?

I ask for a specific reason... I'm getting ready to move from a dedicated server to a "virtual" server. I'm a command line junkie, and I'm being crippled by not having a shell.

So for sites that have hundreds of pages, and only FTP access, how do you handle changes?

If you're talking about code I use Zend Studio.
