I am trying to add things to the Footer but it keeps cutting it off. Can this be fixed

I've raised the size of the allowed characters in the default footer. It was set to 255 now you should now be able to enter 65535 characters.
(not that you should )

Mike, from an SEO perspective, I highly recommend NOT linking all of your sites together in the footer - this is creating an artificial link network, and can get you in serious trouble with search engines.
